Greens and Strawberry Salad with Cashew Currant Dressing

Serves: 2-4

CASHEW DRESSING
1/4 cup raw cashews or 2 tablespoons raw cashew butter
1/3 cup unsweetened soy, hemp or almond milk
1 peeled apple, sliced
2 tablespoons dried currants or raisins
SALAD
1 head (about 6 cups) romaine lettuce
5 ounces (about 5 cups) organic baby spinach
8 med-large strawberries, washed, destemmed and sliced
To make dressing, blend cashews or cashew butter with soy milk and sliced apples in a high powered blender until smooth. Add the currants and blend well.
Place the lettuce, spinach and strawberries in a large salad bowl. Drizzle dressing over the greens and berries and toss to coat.

Beautiful salad!
I'm eating more salad but not for weightloss. I'm eating higher raw for the benefit of more nutrients and the power of food enzymes. So I make big, nutrient dense salads for lunch and do try to have some type of raw veggie, often salad form, with part of a cooked meal.

Dressing was good! However, I was lazy and did not peel the apple.

I absolutely love salads, but I find them a little tedious to make. That's why I love already prepared salad bars! :D
This was the first salad dressing I ever made.... Delicious. I replaced half of the cashews with navy beans and added a sprinkling of cinnamon. Yummy... Thank you!
I made this tonight and it was delicious!! Love the dressing! I didn't even bother to peel the apple and just threw it all into my Vita-Mix. Worked great.
When I'm losing weight the salad is always the main course. When I'm not....the salad seems to slip away.
But be careful to use good dressings!
