The people over at PEERtrainer beat me to it. They wrote an amazingly comprehensive review of Super Immunity, the new book by Dr. Joel Fuhrman. I highly recommend reading their summary if you are interested in some of the incredible nutritional information that is packed into this work.
What's left for me to tell you?
This: everyone should read this book.
It's not a book about weight loss, although that could be the natural result of eating loads of vegetables. It's a book about our health and the medical establishment. About why doctors and pharmacutical companies should not be relied upon for health. We need to take responsibility for our own health, and eating the right food everyday makes a huge impact on our bodys' ability to be disease-resistant.
I thought I knew about food.
I for sure knew nothing about medicine.
Now I know something about both.
Of particular interest to me was the argument that instead of treating colds, fevers, coughs and flus with remedies, that is, after the fact, we can improve our nutrition to the point that these sickness occur far less frequently and when they do occur, with far less severity. Personally, living with three young children, Chapter Four, "Colds and Flu--What We Need to Know" was hugely eye-opening. Fuhrman reviewed the science on what works, what doesn't work and why. And do you know what I am left feeling?
Empowered.
It's just what I needed. I was really struggling with "pushing" vegetables on my kids. My eleven year old eats lots of cooked vegetables, but nothing raw. My six year old will eat raw carrots and that's all. And forget about my three year old.
I didn't know how to make them eat the food that I wanted them to eat. I figured they would learn to love vegetables, just like I did, when they got older. I figured there was still time. I didn't realize the impact it was having on their health right now.
And as if that weren't enough, the back of the book is full of delicious Nutritarian recipes like this, this and this:
Just when you thought you had seen the last of the days of enjoying rice pudding! This can be devoured for breakfast or dessert, even topped off with a little frozen banana soft serve. It's soooooooo good.
Forbidden Rice Pudding
adapted from a recipe from Super Immunity by Dr. Joel Fuhrman
2 cups cooked black (Forbidden) rice (I used a rice cooker or you can follow the package instructions)
2 cups unsweetened almond or soy milk
1/2 cup dried apricots, diced
1 cup frozen blueberries
2 large or 4 small dates, pitted and chopped
1 Tbsp currants
2 tsp ground cinnamon
2 tsp vanilla extract
1 Tbsp chia seed
Place all ingredients, except chia seed, in a medium-sided pot. Bring to a boil over medium-high heat then reduce heat and simmer on low for 15 minutes. Turn off the heat, add the chia seed, stir well, cover and let stand for 5 minutes.

I would have never eaten a lot of the foods I eat now, but it would definitely have to be kale!
For me it would have o be chis seeds and hemp seeds, I never heard of either of them prior to my nutritarian eating.

There are several items in my fridge that I never used before, dates, chia seeds and hemp seeds are the first that come to mind. Always had veggies, but a lot of times they would literally rot from not being eaten...not anymore!
My favorite whole food item that I had not heard of 5 years ago- is probably french green lentils! So much tastier than the regular brown ones.

Well, 5 years ago I had quinoa, lots of beans and rice. But no Kale (though I certainly knew what it was and didn't know how to eat it). I had NO CLUE about anything called Chia and I have some now but haven't used it so that doesn't count. Maybe flavored vinegars?
Kale and spinach, I put one of them in a green smoothie every day and 5 years ago I never ate them, and flax seed, as I put ground in oatmeal each morning, and oil in my smoothie, and I could go on and on. I'm so grateful for all the health info and learning out there now. Debbie MacKillop
There are so many--but the first to jump into my head are kale and quinoa.
Azuki beans. These are so delicious in a salad. You don't have to soak them before cooking as your would with most other beans. Definitely a food item that is always stocked in our kitchen.
My now enjoyed whole food, foreign to my palate 5 years ago yet now kept as a staple and regularly enjoyed, would be forbidden black rice. For native southerners, rice is a staple of most meals. I had been using brown rice for years, for its superior nutritional content and taste, even using basmati rice, and brown basmati as it became more available. The black, which cooks up to this lovely purple color, and tastes amazing, was totally new to me, and has joined brown rice as a regular in my kitchen.
It would definitely have been Kale! I love Kale and can't wait to make chips (need to buy that dehydrater soon!).
I can name a ton of things..lol Tamari, chia seeds, flax seed, Almond milk.. anything to do with vegan or vegetarian I have not heard of..lol Quinoa is a big one knowing how much I love it now..lol

I'm on the hemp and chia bandwagon.
It makes me think of a girl who was friends with my niece many years ago. I made vegetarian lasagne and she raved about it to her mother -- pointing out that I used actual garlic cloves since she didn't know that garlic was anything but a powder. It's funny how things we take for granted are foreign concepts for other people -- nooch, hemp, kale, chard, green smoothies...
It would probably have to be chia seeds, but then there is kale and quinoa too!
Well, I was already eating a lot of different veggies 5 years ago, but something I had never eaten or used in cooking was DATES! They are amazing as an occasional sweetener, of course, and can be used in raw cooking (which I've experimented with a little). I don't keep them at home all the time but love having them on special occasions or to add to a raw soup...
Jonny and I love the taste of Maca powder in our smoothies and think it gives us lots of energy. Certainly never heard of that five years ago!

SO many, but the two that really stand out are chia and steel-cut oats. I don't know what I would do without either nowadays!
I have been vegan for many years now and working in the food industry even longer; I'm also very adventurous in trying out new whole foods so I didn't think there would be anything in my kitchen that would fit your requirements...but that's not the case! There are two whole foods in my kitchen at all times now that I had never heard of 5 years ago: taro root and jicama. Jicama goes into every salad (every day!) and is so crunchy and sweet! Sliced taro root is steamed on top of every pot of rice that I cook; leftovers go into salads, smoothies, sandwich spreads...the possibilities are endless! Thanks for asking!

There's so many! But, to keep it strictly to something I'd never even heard of...I'd have to say bok choy. Two years ago I'd have said that sounded like a martial arts move; and now, my kids and I enjoy it (both raw and cooked) for a few days out of each week (however many days it's in the fridge from my store run). My boys love it in smoothies, so I'm cooking less with it these days, so they can get those raw food nutrients as much as possible.

Quinoa! I had heard it smelled bad when cooking, so I avoided it. When I finally tried it, I found that it was delicious and easy to use (and definitely not stinky!).

Gonna have to say: KALE! Pre-Fuhrman, I thought it was just a garnish used at salad bars...didn't know you could eat it!

I had never heard of jicama 5 years ago. Now I love it. Recently kale has become one of my main salad greens.
So many things! Nutritional yeast, kale, quinoa, chia seeds, flax, and more.
Flax seeds, ground and whole, and chia seeds. They have become staples for us. I even put them in my kiddos homemade granola bars for added health benefits. The amazing thing; they still eat the homemade granola bars even with mom's "healthy" add ins. Bonus!
I'd have to say, like many here, kale is the one thing that I can't do without now. I've always loved veggies, but never had an appreciation for kale until a few years ago. Dino kale! Curly kale! Red kale!
I've been experimenting with whole foods for a number of years, but 5 years ago I had never heard of chia seeds. More important then keeping that unheard-of food in my house, though, is how regularly so many other whole foods are found in our kitchen, like kale, collards, and other leafy greens.

It has to be dark greens. We always had spinach, but I've added fresh collards, kale and dandelion greens to my regular diet. There's so many great ways to enjoy leafy greens. I would have never said that 5 years ago, it was carry-out pizza all the way...ugh!

So many! I used to eat mostly SAD foods. But, I'll say almond milk.
Like many others it is definitely kale, almond milk, and nutritional yeast. I'm also cooking beans from scratch in a pressure cooker - something I never thought of 5 years ago.
I grew up seeing the Chia pet on TV, but only this year started substituting them for flax seeds! I'm eating collard greens every day. I find them less bitter than kale.
Flax seeds! My list could keep on going, it's amazing how much things have changed in 5 years :)

Ginger! I never knew anything about ginger before I saw "Fat, Sick and Nearly Dead". Then I did some research on it and found out how amazing it is for so many things...now I have capsules around the house that I can use for headaches and such....and also use the fresh ginger in my juices!! :)

Thanks for the review and your always informative blog Wendy. Would you believe I ate kale for the first time only 2 weeks ago? It's not common here but found some at a food festival. Also bought some seeds to grow, Kale and Warrigal greens (NZ spinach). Never tried Almond milk 5 years ago, and now make it myself. Had heard of miso soup and tried it but now I have it in the fridge and use it. Frozen berries! The only berries common around here are strawberries, now I buy a box of frozen mixed or blueberries each week, so good in my smoothie.

Quinoa and nutritional yeast are new to me but used often now. I have know kale since I was around 10. As a kid I bought a pack of Kale seeds at the local general store. I had never had it and wasn't a vegetable eater but I wanted something that was mine in the family garden so I bought the kale seeds. Probably all I could afford. I even ate it.

Five years ago I had heard of chia seeds only for growing on "chee, chee, chee, chia" pets and didn't know they were for eating. Now I use them regularly in smoothies and am exploring their use in cooking, too.

I would have to say Nutritional Yeast. I had never heard of that before and now have some in my pantry and am sprinkling it in lots of things - especially over popcorn! The other thing would probably be goji berries. Just heard of these within the last year. :)

Oh my goodness...there are so many foods I eat all the time that I had never heard of most of which are listed already but probably the two most eaten foods for me now are chickpeas and kale. Seriously, hardly a day goes by without eating those foods.
I would have to say Kale is definitely what I eat most often now that I did not know or eat before. But I've never heard of nutritional yeast either (but I guess that does not count for "whole food").

Quinoa wins...hand down. I love this food and put it in everything. We even eat it with steamed veggies for breakfast!
Mine would have to be sweet potatoes. Before Eating to Live I had only had never liked yams (especially piled with marshmallows), so I associated any potato that was sweeter to be unlikable. I hadn't heard of sweet potatoes five years ago because, frankly, I was in high school and never cooked anything besides mac n cheese. Since then, I have had sweet potatoes many ways and can't get enough of them! My favorite recipes are sweet potato fries and sweet potato chili. The sweet potato chili is a recent discovery that, oddly enough has cocoa powder as an ingredient. Odd, but delicious! This is the recipe I use to make it.... in double batches... often :)

Chia seed is the newest thing I've taken a liking too, I wish my kids would be open to more things. I'd love to read this book but I found that his kids' health book made me feel more guilty and depressed than empowered! I find that the harder I try to get my kids to eat more whole foods, the less they want to try new things. They really want to eat well in theory but not so much in practice. Hmm, wonder who they inherited that from?! I love your honesty, especially your recent post about kid feeding.

Nutritional yeast! Or would you believe avocado? I love them both now.
While rolled oats still have their place, it was love at first bite with steel cut oats for me. Now eat them for breakfast practically every day. Add a dollop of my other "recent find" -- nonfat Greek yogurt -- and I'm in heaven.
Chia seeds! They are my current love. And does kabocha squash count? I'd never had one before, and now I don't want to eat anything else. I've never had black rice, gotta look for that now!

Quinoa is my answer and probably the number one answer. I made it through the holidays by loosing 3 pounds. Good start.
I had never eaten Kale, cashew butter, almond milk, coconut water/milk, quinoa,mango, coconut oil, chia and flax seeds, avocado. I had to look up how to prepare an avocado on the internet. I love how my food tastes now and I think my body is appreciating the energy I get from my newfound food freedom!
